Breast Friends Support PCC

The Breast Friends are supporting PCC by donating proceeds from one of their cookbooks! They've graciously shared some of their recipes (below) in honour of Prostate Cancer Awareness week. If you're looking for meal ideas this weekend you should try some of these out!

BREAKFAST PIZZA
(Boys’ bright idea…big taste!)

8 ounces ground pork sausage
5 eggs, lightly beaten
1 –12 inch pizza crust
1 cup Ricotta cheese
¼ cup red onion, chopped
¼ cup tomato, chopped
¼ cup red bell pepper, chopped
¼ cup green bell pepper, chopped
1 cup mozzarella cheese, shredded

Place sausage in a large, deep skillet.  Cook over medium-high heat until evenly brown.  Drain grease and add eggs.  Cook eggs and sausage until eggs are set.  Place pizza crust on lightly oiled pizza pan or baking sheet.  Spread crust with Ricotta cheese leaving the outer edge of crust bare.  Spread egg and sausage mixture over Ricotta cheese.  Sprinkle with onion, tomato, red and green pepper.  Top with mozzarella.  Bake at 375° F. for 
15 minutes, or until cheese and edges of crust are golden brown.
Note:  Veggies can be varied to suit your 

CREAM CHEESE SPINACH SALAD
(A totally delicious salad, without the restaurant price!)

½ cup olive oil
2 tablespoons fresh parsley, minced
1 tablespoon fresh oregano, minced
2 tablespoons lemon juice
1 tablespoon red wine vinegar
1 clove garlic, minced
¼ teaspoon salt
⅛ teaspoon pepper
1 tablespoon sugar or Splenda
1 package cream cheese, chilled in freezer for 30 minutes
6 cups baby spinach
⅓ cup dried cranberries
1 small red onion, finely sliced
1 cup fresh mushrooms, sliced

In container combine: oil, parsley, oregano, lemon juice, vinegar, garlic, salt, pepper and sugar for dressing.  Cut cheese into small cubes; toss with dressing.  Cover and refrigerate for 
30 minutes.  In large bowl, combine spinach, cranberries, onion and mushrooms.  Drizzle with dressing and cheese; toss to coat.  Serve immediately.  Serves 6.

CEDAR PLANK SALMON
Pre-soak a cedar plank in water for 4 hours plus.  
Place a weight on the plank to keep it submerged.

Fresh salmon half, skinned

Marinade:
¼ cup canola oil
½ cup maple syrup (½ cup of brown sugar also works)
2 tablespoons dry mustard
⅓ cup balsamic vinegar

Garnish:
lemon wedges 
dill, chopped

In bowl, blend canola oil, syrup, mustard and vinegar.  Place salmon in shallow pan and pour marinade over.  Cover with plastic wrap and refrigerate for at least 2 hours turning salmon at least once.  
Preheat barbecue to 450° F.  Place salmon on saturated cedar plank and place on hot barbecue.  Barbecue for approximately 
15 minutes, or until salmon flakes when tested with a fork.  
DO NOT turn.  Remove from heat, cover with foil wrap and let rest.  Garnish with lemon wedges and dill. Serve with your favourite rice dish.

DAD’S RAISIN PIE
(Thinking about important men in our lives brought us 
to our wonderful Dads and what great influences they were.  When remembering their favourite food – 
good old raisin pie was a hit with many of our Dads so we wanted to make sure it had a place in this book.)

2 cups raisins
2 cups water
½ cup brown sugar, packed
2 tablespoons cornstarch
½ teaspoon ground cinnamon
¼ teaspoon salt
1 tablespoon white vinegar
1 tablespoon butter or margarine
pastry for 9 inch double crust pie

Preheat oven to 425° F.  Combine raisins and water in small saucepan.  Boil 5 minutes.  Blend brown sugar, cornstarch, cinnamon, and salt; add to hot raisins.  Cook and stir until syrup is clear.  Remove from heat, and stir in vinegar and butter.  Cool slightly.  Turn filling into pastry lined pie plate.  Cover with top crust.  Seal edges, and cut slits in the top crust.  Bake for 
30-35 minutes.

5 MINUTE CHOCOLATE MUG CAKE
(And why is this the most dangerous chocolate cake recipe in the world?  Because now we are only 5 minutes away from chocolate cake at any time of the day or night!)

1 large coffee mug (microwave safe)
 
4 tablespoons flour
4 tablespoons sugar
2 tablespoons cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips (optional)
splash of vanilla

In large mug, put flour, sugar, and cocoa; mix well.  Add egg and mix thoroughly.  Pour in milk and oil; mix well.  Add chocolate chips (if using) and vanilla and mix again.  Put mug in  microwave and cook for 3 minutes.  The cake will rise over top of the mug, but don’t be alarmed!  Allow to cool a little and tip out onto a plate if desired. EAT! (This can serve 2 if you want to feel slightly more virtuous!)
